I think that ammonium caseinate is usually manufactured 'in situ', by
dissolving casein in a warm solution of ammonia. That's the way I used

Incidentally if you require casein there is no need to pay chemical
company prices. Just acidify some skimmed milk with acetic acid, filter,
wash thoroughly and there you have it!
